Introduction

Ingredients:

  • 1 bunch fresh spinach, washed and chopped
  • 1 block paneer, cubed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 cup water
  • 1/4 cup heavy cream
  • Salt to taste
  • Ghee or butter for cooking

Instructions:

  1. Sauté the aromatics: Heat ghee or butter in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then, add onions, garlic, and ginger. Sauté until the onions turn golden brown.
  2. Add the spices: Stir in coriander powder, red chili powder, and turmeric powder. Cook for another 30 seconds, stirring constantly.
  3. Add the spinach: Add the chopped spinach to the pan and cook until it wilts down and releases its water.
  4. Simmer and puree: Pour in the water and bring the mixture to a simmer. Cook until the spinach is tender and the water has reduced. Let the mixture cool slightly before transferring it to a blender. Blend until smooth.
  5. Add paneer and cream: Return the pureed spinach mixture to the pan. Add the cubed paneer and simmer for a few minutes, allowing the paneer to heat through. Stir in the heavy cream and adjust the seasoning with salt to taste.
  6. Serve: Serve hot with naan, roti, or rice.

Tips:

  • For a thicker gravy, add a tablespoon of cornstarch mixed with a little water to the spinach puree before adding the paneer and cream.
  • To make this dish vegan, use tofu instead of paneer.
  • Garnish with fresh coriander leaves for added flavor and aroma.
