Introduction
Palak paneer is a classic Indian vegetarian dish that is loved for its creamy texture and rich flavor. Made with fresh spinach (palak) and Indian cottage cheese (paneer), this dish is a perfect blend of earthy and tangy notes. Let's dive into the recipe!
Ingredients:
- 1 bunch fresh spinach, washed and chopped
- 1 block paneer, cubed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 cup water
- 1/4 cup heavy cream
- Salt to taste
- Ghee or butter for cooking
Instructions:
- Sauté the aromatics: Heat ghee or butter in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then, add onions, garlic, and ginger. Sauté until the onions turn golden brown.
- Add the spices: Stir in coriander powder, red chili powder, and turmeric powder. Cook for another 30 seconds, stirring constantly.
- Add the spinach: Add the chopped spinach to the pan and cook until it wilts down and releases its water.
- Simmer and puree: Pour in the water and bring the mixture to a simmer. Cook until the spinach is tender and the water has reduced. Let the mixture cool slightly before transferring it to a blender. Blend until smooth.
- Add paneer and cream: Return the pureed spinach mixture to the pan. Add the cubed paneer and simmer for a few minutes, allowing the paneer to heat through. Stir in the heavy cream and adjust the seasoning with salt to taste.
- Serve: Serve hot with naan, roti, or rice.
Tips:
- For a thicker gravy, add a tablespoon of cornstarch mixed with a little water to the spinach puree before adding the paneer and cream.
- To make this dish vegan, use tofu instead of paneer.
- Garnish with fresh coriander leaves for added flavor and aroma.
